Let's Make - Gold Chocolate Gelato

Ingredients:
130g Gold Chocolate (Callebaut - Find it here: [ Ссылка ] )*
4 Egg Yolks (in this video we used pasteurized yolks)
125g Sugar
300ml Whole Milk
150ml Cream
The Machine we are using to churn the Gelato/ Ice Cream is a Musso 4080. It rotates with 80 rotations per minute whipping a lot of air into the Cream which gives it a very smooth and nice texture. Truth be told, we havent seen any IceCream storebought this good.. It is really amazing.
