Green pozole with chicken, better known as Pozole Verde is a Mexican soup packed with flavor that's quick and easy to prepare. It's warm and comforting, yet bright and tangy so it's perfect to enjoy any time of the year. Tomatillos and green chiles are used for the soup base along with chicken and hominy, a dried corn that's been soaked in lime or lye so the kernels soften and shed their hull.

This recipe is a great way to feed a lot of people in one sitting or if you want make a large batch of something for several meals throughout the week. Enjoy!

POZOLE VERDE RECIPE
(easily feeds 6-8 people)
Whole Chicken, about 3.5 lbs. (or 1 2/3kg)
Poblano Chiles, 2 each
Jalapeño Peppers, 2 each
Tomatillos, about 1 lbs. (or 1/2kg)
Yellow Onion, 1 each, 6 oz. (or 170g)
Garlic Cloves, 5 each
Ground Cumin, 1/2 tsp.
Dried Mexican Oregano, 1/2 tsp.
Sea Salt, about 1 tsp or to taste

POZOLE TOPPINGS
(all as needed)
Shaved Radish
Shaved Cabbage
Cilantro Leaves
Avocado
Lime Juice

Other topping ideas might include: Pumpkin seeds, tortilla chips, red onion, crumbled cheese, and sour cream.
