These delicious Keto Walnut Brownies are perfectly fudgy with just the right crunch from the walnuts. With only 2 grams net carbs per serving, they are a perfect guilt free dessert.
Keto Walnut Brownies
Ingredients:
½ Cup Almond Flour (55 grams)
¼ Cup Cocoa Powder (20 grams)
½ tsp Baking Powder (2 grams)
¼ tsp Salt
10 Tbsp. Salted Butter, melted (141 grams)
½ Cup Granular Swerve (120 grams)
½ Cup Chocolate Chips, divided (80 grams)
3 Large Eggs (168 grams)
2 tsp Vanilla Extract
½ Cup Chopped Walnuts, divided (60 grams)
Preparation:
In a medium sized bowl, mix together the first 4 ingredients.
In another bowl, mix together melted butter and Swerve. Melt ¼ Cup Chocolate Chips (2x15 seconds in microwave). Add in the melted chips to butter and Swerve. Mix well and set aside.
To a mixer bowl, fitted with a whisk attachment, add 3 Large eggs and whip on medium high until eggs become frothy. Add the vanilla extract and then the liquid ingredients. Mix to combine and then add in the dry ingredients. Mix to combine. Fold in ¼ Cup chopped walnuts.
Transfer into a 8X8” pan, lined with parchment paper.
Optionally, sprinkle another ¼ Cup Chopped Walnuts and ¼ Chocolate Chips.
Bake at 350 °F (177 °C) for 20 minutes for gooey brownies or 25 for cakey brownies.
Let cool for 20 minutes in the pan before cutting int0 16 squares.
Serve immediately and store the leftovers in an airtight container.
