Although they are both using OLED panels, the Skyzone is more superior. To keep it brief, the SKY03O image has higher contrast and shows the detail better than the HDO.

The Fatshark HDO I have is nearly 2 years old, and the SKY03O is brand new. I don't know much that affected the test, but I've done my best to present the best performance from both goggles and hopefully this is useful.
