Learn how to make this easy and healthy No-Bake Blueberry Almond Energy Bites — Gluten free and Vegan!
Recipe:
Ingredients:
¼ cup flax meal
½ cup dried blueberries
2 tbs coconut
⅓ cup raw almonds, finely chopped
1 cup gluten free oats
1⁄4 cup agave nectar
6 tbs almond butter
2 tsp almond extract
Directions:
1. Combine oats flax meal, dried blueberries, coconut, almonds together in a bowl. Toss to combine.
2. In a microwave safe bowl, combine your wet ingredients- agave nectar, almond butter and almond extract.
3. Microwave for 30 seconds, stirring to ensure the mixture is smooth.
4. Combine your wet ingredients into your dry mixture. Stir until combined.
Tip: If you find that you need more almond butter, just be sure to melt it until it’s smooth and add until the mixture clumps
5. Take a tablespoon of the mixture and roll into a ball. Continue doing this until the mixture has finished. Store in refrigerator for 2 hours.
