Ingredients:
Mustard Mayo:
- 3 medium-sized eggs, boiled
- 1 tbsp lemon juice
- 10 tbsp oil (sunflower oil, preferably mild-tasting)
- 2 tsp sweet mustard
- small bunch of chives & parsley
- salt & pepper
Caramelized onions:
- 1 large onion
- oil as needed
- about 100-150 ml dark beer
- salt & pepper
Burger:
- 4 burger buns
- 4 bratwursts
- sauerkraut
- 1-2 large pickles
- 8 slices of swiss cheese
- 4 eggs

Burger Buns: (makes 6 burger buns)
Tangzhong:
- 20 g flour
- 30 g water
- 60 g milk
Dough:
- 120 g milk (30-34°C)
- 20 g fresh yeast
- 320 g flour type 550
- 1/2 tsp salt
- 35 g sugar
- 1 medium egg
- 40 g soft butter
- 1 egg + a little milk for brushing
Instructions for Burger Buns:
1. First, prepare the tangzhong. Combine all ingredients in a small pot and heat over medium heat, stirring constantly, until a thick paste forms.
2. Place some flour in a bowl, just enough to lightly cover the bottom. Add sugar, crumble the yeast over the sugar, and pour in the milk. Cover and let it rise for 15 minutes.
3. Add the remaining flour, salt, and tangzhong to the mixture and knead for about 10 minutes until a dough ball forms. Add the egg and continue kneading until fully incorporated. Gradually add butter while kneading and continue for another 5-10 minutes. Cover and let it rise for 1-2 hours until the dough has doubled in size.
4. Divide the dough into 6 equal parts. Briefly knead each part and shape into a dough ball. Place the dough balls on a baking sheet lined with parchment paper, cover with a kitchen towel, and let rise for another 30-60 minutes.
5. Before baking, brush the buns with a mixture of egg and milk and sprinkle with sesame and poppy seeds if desired. Bake at 190°C for about 20 minutes until the burger buns are a nice golden color.
6. These burger buns freeze wonderfully. It's best to freeze them right after they've completely cooled.
