Here's a classic chicken soup recipe that's easy to follow and packed with flavor:
Serves : 4
Prep time: 20 minutes
Cook time: 1 hour 30 minutes
Ingredients:
* 300 grams chicken with bones.
* 1/4 cup finely chopped coriander stems
* 1 onion, finely chopped
* 4 garlic clove, minced
* 4 cups water
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 2 bay leaf
* 4 cloves
* 4 black pepper corn
* 1 inch cinnamon stick
* 1/4 cup spring onions
* 1l4 cup carrots chopped
* 1/4 cup chopped capsicum
* 2 tbsp soya sauce
* 1 tbsp vinegar
* Corn flour 3 tbsp ( for making corn flour slurry)
Instructions:
* Prep the chicken: Rinse the chicken and pat it dry with paper towel.
* Fry Chicken : In a large pan add butter and oil then add bay leaves , cinnamon , cloves , black peppercorn, chicken, salt cover and cook for 5 minutes. Remove the lid and add chicken stock and cook for another 15 to 20 minutes.
* Remove chicken: Strain the soup through a fine-mesh sieve to remove the cooked chicken in a plate. Let it cool slightly. Shred the meat from the bones and discard the bones.
* Heat a kadai in medium flame add oil and butter as the butter melts add ginger, garlic, green chillies and coriander stems. Stir it well then add shredded chicken and stir for 1 minutes now add all the vegetables like capsicum, French beans, spring onions, carrots, onions, stir it for 2 minutes, Now add chicken stock and give it a stir. Bring it to a boil over medium-high heat. Once boiling add soya sauce, vinegar, salt, corn flour slurry, egg and simmer for 5 minutes and your tasty chicken soup is ready .
