It's that time of year when everything becomes available in a pumpkin spice flavor: coffee, cake, cookies, M&Ms - you name it! Even though the flavor is great, a lot of these seasonal treats are quite unhealthy. I found a simple pumpkin cookie recipe on Pinterest and adapted it to make these! They're just as sweet and delicious as any other pumpkin spice treat, but without the crazy amounts of sugar and processed ingredients. I hope you enjoy! Please let me know if you try them out!

M E N T I O N E D
2 cups gluten free quick oats (must be quick oats)
1 cup pure pumpkin
1/4 cup sweetener (unrefined coconut sugar, agave, honey - it's up to you!)
A few pinches of chia seeds
Sprinkle in cinnamon, all spice, vanilla, nuts, and dairy-free chocolate chips as desired
Bake at 350 F for 12-15 minutes
Yields ~18 cookies, depending on size
