Servings: 6 muffins
Ingredients:
4 eggs
1 red bell pepper, finely diced
1 cup spinach or kale, finely chopped
2 (5 oz.) cans or pouches of salmon
½ cup grated Parmesan cheese
½ tsp. kosher salt
¼ tsp. black pepper
4 splashes of hot sauce
Instructions:
1.Preheat oven to 375 degrees F. Lightly spray a 6 muffin pan with nonstick cooking spray or place 6 cupcake liners in muffin pan.
2.In a medium bowl, combine all ingredients and mix well.
3.Divide mixture between the 6 muffin cups. Bake for 20-25 minutes, or until muffin tops are firm to the touch.
