Instructions:
1. Heat oil in a large pot, add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.
2. Add the Kienyeji chicken pieces to the pot. Brown the chicken on all sides.
3. Stir in chopped tomatoes, tomato paste, and green bell pepper. Cook for a few minutes until the tomatoes release their juices.
4. Season with salt, pepper, and your preferred spices. Add curry powder for an extra flavor boost.
5. Pour in enough water or chicken broth to cover the chicken. Bring to a boil, then reduce the heat and simmer until the chicken is cooked through.
