Ever heard of the reverse sear method? It’s a 2 step process that perfectly cooks your steak to the desired temp (oven or sous vide) & then simply seared in a hot pan.
I sous vide it at 131 F for 2.5 hours, seasoned with salt & pepper before. Directly from the sous vide bath, patting dry and searing for a beautiful crust. 😋
