How to make Asian beef meatballs for pho at home
Ingredients and recipe
Part 1 - getting ground beef ready
- 2 lbs lean ground beef halfway frozen
- Grind and blend it the food processor 1 lb at a time for 2 minutes each time with a 30-second turn on and off.
- Remember meats have to be half-frozen to get the bouncy texture otherwise your meatballs will not hold together.
Part 2 - mixing the ingredients before adding into ground beef
- After all, that is done to mix these ingredients
- 1/3 cup ice water
- 2 tbsp fish sauce
- 1 tsp salt
- 1 1/2 tbsp sugar
- 1 tsp baking soda
- 2 tbsp corn starch
- 5 fine chopped garlic
- 1/2 tsp ground pepper
Mix everything well together and pour it all into the food processor and blend it for 2-3 minutes until you get the consistency paste texture. Transfer into a bowl after.
Part 3 - cooking the Asian beef balls
- put water into a pot and bring it to halfway boil and turn the heat to medium all the way through.
- You will need to put cold water in another bowl for wetting hands and spoon.
Part 4 - technique on how to make the round beef balls
- Wear gloves or not, it’s up to you.
- Wet your hand and spoon
- Scoop the beef paste into one hand and using your thumb and pointing fingers and squeeze the beef paste out of your hand through pointing and thumb finger and then use the spoon to cut it off and drop it into the halfway boil water.
- Repeat the steps until there is no more beef paste.
- You know when the beef balls are cook when it turns completely grey and all the meatballs are floating up. Usually, it should take about 20 to 30mins slowly cooking it.
- If you are storing them, make sure to put into ice-cold water to cool it down first before out into the freezer. This way it keeps the meatball fresh and holds its good texture.
The broth from cooking the meatballs, don’t throw it way, you can use it for a quick pho broth. Just add salt sugar and fish sauce and throw in cinnamon sticks and a few star anise and ginger you will a quick pho broth for the day. Or just add into your big pot of beef bone broth.
