How to make Kingfish Steaks: [ Ссылка ]

Brine:
1/4 cup salt
1/3 cup sugar
4 cups water
1 tsp Worcestershire
1 tsp onion powder
1 tsp garlic powder
Shake red pepper flakes

1. Stir together 2 cups of warm water with sugar and salt until sugar and salt melts. Add 2 more cups of room temperature water with the rest of the ingredients.
2. Add fish and brine for 2 hours.
3. Smoke fish on the smoker at 165 degrees until fish is cooked.
4. Separate the meat from the skin, bloodline, and bones.
5. Follow the fish dip recipe below.

Dip recipe:
1 pound of smoked fish
3 tbs mayonnaise
1/4 cup sour cream
2 tbs freshly squeezed lemon juice
1 tsp Worcestershire
1/2 tsp liquid smoke
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp old bay
2 tbs chopped parsley
1 tbs chopped fresh dill
3 heaping tbs of lightly chopped onion

1. In a food processor pulse together the fish, mayonnaise, sour cream, lemon juice, Worcestershire sauce, liquid smoke, paprika, garlic powder, onion powder, and old bay until liking.
2. Add chopped parsley, fresh dill, and onion.
3. Continue pulsing ingredients together until the consistency is to your liking.
4. Service with crackers and enjoy!
