SEV TAMETA NU SHAAK
Ingredients
¼ cup sev + for sprinkling
6-8 medium tomatoes (tameta), finely chopped
2 tablespoons oil
1 teaspoon mustard seeds
1 green chilli, finely chopped
½ teaspoon finely chopped ginger
1 teaspoon finely chopped garlic
Salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon sugar
1 tablespoon finely chopped fresh coriander leaves
Fresh coriander sprig for garnishing
Method
1. Heat oil in a non-stick pan. Add mustard seeds and sauté till the seeds splutter.
2. Add green chillies, ginger and garlic, mix and sauté well. Add salt and tomatoes and mix well.
3. Add turmeric powder, chilli powder, salt and coriander powder, mix well and cook till tomatoes turn soft and pulpy.
4. Add sugar and mix well. Add some water, mix, cover and cook for 2-3 minutes.
5. Add coriander leaves and sev and mix well.
6. Sprinkle some sev on top, garnish with coriander sprig and serve hot with chapattis.
