Recipe :
Pan Pizza
Preparation Time: 20 minutes
Cooking Time: 5-6 minutes per pizza
Serves: 5
Ingredients:
For the base:
2 cups flour
1/2 cup yoghurt
2 tsp Baking powder
½ tsp baking soda
1/4 tsp salt
2 tbs olive oil
For the sauce:
10 large red tomatoes
10-12 Basil leaves
½ tsp Salt
½ cup Tomato puree
¼ cup finely chopped garlic
2 tbsp olive oil
Garlic Butter:
50 g butter
1 head garlic
3tsp oil
Toppings:
1 cup grated mozzarella cheese
½ cup grated processed cheese
Cubed capsicum
Cubed onions
Cubed tomatoes
Corn
Oregano
Chili flakes
Salt to taste
Crushed pepper
Method:
For the base:
Add the salt, baking soda and the baking powder to the flour and mix well. Add the yoghurt and knead into a loose dough.
Add in the oil and knead for a minute.
Cover the dough with a wet cloth and set aside for 15 minutes.
Knead the dough lightly for a minute.
Break the dough into 5 equal balls.
Dust the floor and the dough balls well and roll each ball to a thickness of 1/2 cm.
Heat an empty 9” frying pan on the gas stove with the lid on.
Brush the hot pan with a little oil and carefully place the rolled pizza base over it. Add a few drops of water, cover and cook till the base puffs up.
Remove the base from the pan and cook over flame till you get brown spots.
Base is ready.
Reheat the pan on high for another minute before placing the next base.
Pizza Sauce:
Cut the tomatoes into halves. Remove the stems, seeds.
Heat the oil in the pan. add the garlic and sauté till lightly coloured. Place the tomatoes cut side down on the pan. Cover and cook till the tomatoes soften and the skin comes loose. Remove the skin and mash the tomatoes with a potato masher.
Add basil leaves, salt, chili flakes and oregano, tomato puree and cook till the sauce thickens. Remove and cool completely. Store refrigerated.
For the garlic butter.
Heat the oil over low heat. Add the garlic and sauté till it softens.
Remove from heat and smash the garlic. Blend it into the butter and set it aside.
To prepare the Pizza:
Spread the garlic buttr over the pizza base.
Spread the pizza sauce, spread about 1/3 cup cheese on the sauce.
Add toppings of your choice.
Sprinkle seasonings to your taste.
Heat pan to medium heat. Place the pizza.
Cover immediately and cook over medium heat for 4-5 minutes or till the cheese is well melted.
Remove from heat and serve!
