Ingredients:
For Marinade:
2 chicken breasts, about 630g (cut into bite-sized pieces)
1/2 tsp salt or to taste
1 tsp white paper
2 tbsp cornstarch
2 tbsp water
1 tbsp oil
For sauce
3 tbsp Tomato ketchup
3 tbsp Soy sauce
1 tbsp Oyster sauce
1 tbsp Chilli sauce or to taste
1 tsp Vinegar
1 tbsp Honey
1 tbsp Worcestershire sauce
Other ingredients:
Oil to fry chicken and cooking
2 small shallots, diced
3-4 cloves of garlic, minced
1-inch piece of ginger, minced
3-4 dry red chillies (remove seeds if desired)
1/4 cup cashew nuts or more if desired
3-4 spring onions (white parts)
2 medium-sized bell pepper/capsicum, diced
Sesame oil to taste
Salt and pepper to taste
1 tbsp cornstarch + 2 tbsp water
Sprinkle in some spring onions (green parts)
Garnish with chopped chives or spring onions
Fried rice:
2 cups boiled rice
Oil for cooking
3 eggs
2 cloves of garlic, minced
2-3 green chillies, thinly sliced (optional)
1 medium carrots, diced (about 1/2 cup)
1 cup cabbage, diced
Soy sauce to taste
Vinegar about 1 tsp or to taste
Chilli sauce as per your taste
Salt and pepper to taste
Sesame oil to taste
Spring onions, chopped
