A favorite Christmas memory is looking for my mom's spritz cookies she made every year. I was so excited to find her special recipe I had to share it. These gems are good all year round but are especially fun for Christmas.
Spritz Cookies

Preheat oven to 350o
DO NOT GREASE COOKIE SHEET!
Cream butter with mixer
1 cup butter (softened)
Continue to mix while adding gradually
¾ cup sugar
Continue to mix while adding unbeaten
1 egg (or 3 egg yolks)
Mix in
1 teaspoon almond extract
In a separate bowl mix together all dry ingredients
2 ½ cups flour
½ teaspoon baking powder
1/8 teaspoon salt
Add dry ingredients to butter mixture and mix all thoroughly. Stop mixer to scrap the bowl if not mixing well and finish mixing thoroughly.
Divide out batter for different colors (use 4 or 5 drops and add more if needed) and mix thoroughly. (Or just use white and decorate pressed cookies with sprinkles just before baking or frost when completely cooled.)
Force through cookie press on UNGREASED cookie sheet.
Bake 9 minutes in 350o or until the edge just starts to brown lightly
Note: the cookies need to cling to the cookie sheet when pressing. It is very important not to grease the sheet or they will not release from the press.
