Ingredients:
• EVOO (Extra Virgin Olive Oil)
• 4 cans whole corn, drained
• 3-4 T butter, salted
• 1 jalapeno, chopped or canned green chilis
• ½ T Garlic powder
• 1-2 T Parmesan cheese
• Salt & Pepper to taste
• 1 block cream cheese, softened
• 4 oz Colby jack cheese, grated
Directions:
1. Preheat oven to 350°
2. Heat cast iron skillet with EVOO on med heat
3. Sautee corn and butter
4. Turn heat off and add parmesan cheese, jalapeno, garlic powder, cream cheese, salt and pepper
5. Top with cheese
6. Bake for 20 minutes (if you skip steps 2 & 3, bake longer)
