AFGHAN BOURANI BANJAN RECIPE || Eggplant with Tomatoes and Garlic Yogurt || Borani Banjan Afghani
In this video, we show you an Afghan Bourani Banjan Recipe. Borani Banjan Afghani style is a dish that is consists of Eggplant with Tomatoes and Garlic Yogurt. Bourani Banjan is incredibly delicious with layers of aubergine (also known as eggplant, baingan, brinjal or banjan), a rich tomato sauce and cool garlic and mint yogurt. This Afghani dish is extremely versatile and can be served with rice (such as Kabuli Pulau), roti, naan, bread, salads and even grilled food like kebabs. Bourani Bangan is popular in Afghanistan and can be served cold or at room temperature, making it the perfect side dish for the summer!
To make this Afghan Bourani Banjan Recipe, you will need:
Step 1: Eggplant/Aubergine prep
2 medium-sized eggplants (or 1 large)
salt to taste
oil for shallow frying
Step 2: Tomato Prep:
2 tbs oil
3 grated garlic cloves
3 medium-sized tomatoes
1 tbs tomato puree
salt to taste
1/4 tsp black pepper
1 tsp coriander powder
1 tsp cumin powder
1 tsp paprika
1/4 tsp turmeric powder
1/2 tsp chili flakes
1 green chili (or to taste)
2 tbs water
2 tbs coriander leaves
Step 3: Garlic Yogurt
1 cup cold yogurt (thick Greek-style yogurt works best)
1 grated garlic clove
salt and black pepper to taste
1/2 tsp dried mint leaves
*you can also use dried dill leaves if you don't have dried mint as that also gives a wonderful flavour
