Anda Masala
Recipe in English:
Ingedients:
-Cooking oil 3-4 tbs
-Pyaz (Onion) chopped 1 large
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Tamatar (Tomato) pureed 2 medium
-Hari mirch (Green chilli) chopped 1 tbs
-Kashmiri Lal mirch powder (Kashmiri red chilli powder) 1 tsp
-Dhania powder (Coriander powder) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Water ¼ cup
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Anday (Eggs) Hard boiled cut in slices 8-9
-Hari mirch (Green chillies) sliced
-Hara dhania (Fresh coriander) chopped
Directions:
-In a wok add cooking oil, onion and fry until translucent.
-Add ginger garlic and mix well until light golden.
-Add pureed tomato and mix well.
-Add green chilli and mix well.
-Add kashmiri red chilli/paprika powder, coriander powder, black pepper powder, salt, turmeric powder, cumin seeds, dried fenugreek leaves, mix well and cook for 1-2 minutes.
-Add water, mix well, cover and cook for 2-3 minutes or until oil separates.
-Add fresh coriander and mix well.
-Add boiled eggs and mix gently.
-Garnish with green chillies, fresh coriander and serve.

Tarkeeb:
-Wok may tel garam karen or piaz daal kar halka fry karen.
-Ginger garlic paste daal kar milayen or light golden honay tak fry karen.
-Pureed tamatar daal kar achi tarah milayen.
-Hari mirch daal kar milayen.
-Kashmiri laal mirch powder, dhania powder, kali mirch powder, namak, haldi powder, zeera powder, kasuri methi daal kar milayen or 1 se 2 minutes tak pakayen.
-Pani daal kar milayen or dhak kar 2 se 3 minutes tak ya tel alag honay tak pakayen.
-Hara dhania daal kar milayen.
-Boil anday daal kar namri se milayen.
-Hari mirch or hara dhania daal kar serve karen.
