Recipe ⬇️ Cánh Gà Chiên Nước Mắm - Vietnamese Fish Sauce Wings
Ingredients:
• 2 lbs Chicken Wings - rinse and pat dry
• 3 cloves Garlic roughly chopped
• 3 Shallots roughly chopped
• Marinate wings overnight or few hours with Shallots & Garlic
• 2 TBSP Unsalted Butter (optional)
Wings Sauce: Mix together
1/2 cup Fish Sauce (Three Crab Brand)
1/2 cup Sugar
1 Tsp Lime juice
Minced Red Thai Chilis (optional)
Set aside
INSTRUCTIONS:
• In a large pot on medium high heat, add enough neutral oil to cover the chicken wings for frying
• Wait for the oil to reach 350F temp or use chopsticks to check for bubbles then it’s ready
• In batches, fry the wings for 5-7 minutes
• Scoop out the fried shallots and garlic as soon as it turns a golden brown. Set aside onto a plate lined with paper towel
• Remove wings, place on a wired rack tray
• In a separate large pan, heat up the Wings sauce on medium low heat
• Turn off the heat immediately once it starts simmering
• Double fry the wings again for 2-3 minutes
• Remove wings, add to the fish sauce mix
• Add 2 Tbsp Butter
• Toss for 30-45 seconds to coat the wings evenly
• Add to a serving plate
• Sprinkle the fried garlic and shallots. Enjoy with rice!
