Today, we're making "potatoes" 3 ways using radishes: hash browns, potato salad, and mashed potatoes! Hope you enjoy! :)
Potato Salad Ingredients:
3 lbs Radishes, halved and quartered
1 T Apple Cider Vinegar
2 T Minced Fresh Dill
335 grams Mayonnaise
5-6 T Dijon Mustard
120 grams Chopped Red Onion
185 grams Chopped Celery
5 Large Eggs, Chopped
Salt/Pepper to taste
*** A tip: After setting in the fridge for a couple of hours, I found the radishes still slightly watery, so you may want to mash and squeeze out the water before adding to the salad mixture.
