This evening I felt inspired to head down to the beach and do my second sunset time lapse on my GoPro Hero 2. I started by getting the standard battery all charged up (as well as my battery bacpac) then putting it in time lapse photo mode. The settings I decided to go with are as follows:
* Time Lapse Photo Mode
* 30 Second Intervals
* 11 Megapixels (MP) - WIDE
Ended up being around 275 photos total after it was all said and done for the elapsed time period I had it out in the evening.
I also decided that while I was doing the editing not to use any effects or filters of any kind to show to 100% real and true colors captured by the GoPro Hero 2 in it's rawest form.

For anyone who wants to learn more about time lapses in general, I like Wikipedia's definition:
Time-lapse photography is a technique whereby the frequency at which film frames are captured (the frame rate) is much lower than that used to view the sequence. When played at normal speed, time appears to be moving faster and thus lapsing.
