Cilantro Lime Rice 🍚🌿
Let’s make Chipotle’s cilantro lime rice at home that tastes even better! I love how easy this recipe is and how flavorful the rice becomes. This is perfect for your next meal prep!
Ingredients:
-3 cups of uncooked white rice
-4 fresh limes
-one bunch of finely chopped cilantro
-salt to taste
-3 tbs oil (vegetable, avocado, olive, etc.)
-fresh lime zest
-2 dried bay leaves
Instructions:
-wash the uncooked white rice with cold water until the water runs nearly clear
-for the finger method, touch the tip of your middle finger to the top of the rice and add enough water until it comes up to the first crease -otherwise, you can follow package or online instructions on how to properly cook rice
-add bay leaves to the rice before cooking
-as the rice cooks in the rice cooker or stove top, prepare the other ingredients
-once the rice is cooked, immediately fluff it with a rice paddle and transfer it to a large mixing bowl
-add about 3 tbs of neutral oil, juice from two limes, cilantro, lime zest, and 1 tsp of salt; give it a thorough yet gentle mix
-taste the rice with a clean spoon and adjust the flavors accordingly
