It's a Roman specialty, a classic street food, something you grab whenever you are hungry. Today we'll visit one of the best supplì shop in Rome, Pizzeria Re di Roma. You'll see hard working Italians making "fast but good food" everyday with love....just fantastic.

Everybody loves Italian but have you ever heard of Supplì?
If you haven't tried them yet you've got another reason to visit Rome
They're fried rice bowls. A Roman specialty
sounds simple but believe me, not easy to make.
Once I've tried, it took me more than 4 hours and in 10 minutes they were gone.Never again!
Today I'll take you to the very best supplì
shop of the city.
Here we are, Re di Roma Pizza
better known as the house of supplì, offering Romans fast but good food since 1979. Here it says the name supplì comes from the word "surprise"
During 1800s soldiers of Napoleon occupied Rome and guess what, they got to know these Roman specialties with a little "surprise" the mozzarella inside. Hence "surprise" in French "surprise"= supplì
It's 6: 30 in the morning
but I'm really excited today because I get to see the backstage of this fantastic place
So here he is: Mr. Supplì, Stefano
He's been working here for 20 years which means I've been enjoying HIS supplìs all this time
First of all we need to prepare il ragu, the meat sauce 4 kilos of minced beef carrots celery onions
mushrooms are already cooking. Smells delicious After 3 hours or so he adds tomato cans broth salt and rice
Once cooked he pours the rice in these to cool it down
then he starts making these little rugby balls. 800 of them every day.
We're only halfway here now we need to fry them
Frying goes all day long as people come in and out asking for supplìs throughout the day Some even for breakfast! Anytime is supplì time I guess.
So let's move on to frying them
He soaks the balls in the batter made of flour and water then into the super fine breadcrumbs This is where Stefano shows his expertise
He's saying he's going slow to make us see
Peanut oil is used to fry them. The crust is so thin and light it's not greasy at all
Ready to go!
He also prepares the arancinis which are of Sicilian tradition.
These are with gorgonzola cheese, radicchio that is red italian chicory, porcini mushrooms and red wine.
Sounds fabulous
These are cacio e pepe, cheese with tons of black pepper. Nice!
and these with peas, mushrooms, porcini, saffron with the mozzarella inside
So apart from supplì we have 3 kinds of arancinis to distinguish them he makes them in different shapes

They have varieties of stuff from fresh fried donuts to all sorts of pizzas veggies lasagnas steaming roasted chickens. freshly homemade every single day
but obviously their fame is due to these: the super supplìs
