Tomato Mint Chutney Recipe:
Oil - 2 tbsp
Mustard Seeds - 1 tsp
Dried Red Chilli - 3 nos
Asafoetida/Hing Powder - A Pinch
Garlic - 5 Cloves
Ginger (roughly chopped) - ½-inch piece
Tomato (roughly chopped) - 2 Cups
Turmeric Powder - ½ tsp
Salt - ¾ tsp
Sugar - ½ tsp
Mint Leaves - 1 Cup
Coriander Leaves - 1 Cup
Cooking Instructions:
1. Heat oil in a pan and splutter the mustard seeds.
2. Add the dried red chillies, asafoetida, garlic and ginger. Lightly saute them and then add in the tomato, turmeric powder, salt and sugar.
3. When the tomato softens and releases its moisture, add the mint leaves and coriander leaves. Cook for 1 more minute.
4. When it cools lightly, blend it into a slightly coarse chutney.
5. This can be served as a dip with idli, vada, dosa and also with roti and rice. It can also be used as a sandwich spread.
