Ingredients:
Puff Pastry, 2lb
Camembert, 1/2lb
Strong Mustard, 3 tbsp.
Bacon, 10 streaks
Grated Mozzarella, 3/4 cup
Egg, 1 medium
Poppy Seeds, 1 tsp.
Garlic, 3 cloves
Rosemary, 3 sprigs
Method:
1) Start by rolling out two circles of puff pastry and trim using a 12-inch bowl. Trim a space for the camembert wheel in one of the circles and set it aside.
2) Now place the camembert in the center of the puff pastry and surround it with mustard. Lay bacon streaks around the camembert and sprinkle grated mozzarella (or any cheese of your choosing!) on top.
3) Place the second puff pastry circle over the top leaving the camembert exposed through the middle. Take a sharp knife and slice between each bacon streak from the middle to the edge. Carefully twist each one and lay back flat again.
4) Egg wash the ring and top with poppy seeds. Slice the camembert skin and add garlic & rosemary.
5) Place in a preheated oven at 180C / 350F for about 20 minutes.
