hey foodies,
sharing with you the Ashgourd dosa recipe.... It is a super soft fluffy dosa that has its own unique taste.....The theory behind this is very simple, reduce the quantity of urad dal, and replace water required for grinding with ash gourd juice... its as simple as that.... here I have taken 2 cups of rice to which 1/4 cup of urad dal & 1 tsp of methi seeds are used... a small-sized ash gourd is used to make juice .... strain water completely and bring the soaked dals and rice with only ash gourd juice.... hardly I have used around 1/2 glass water to adjust the consistency.... rest everything is same.... ferment overnight and next day ur batter is ready....
this dosa has a unique smell and taste that comes from ash gourd... some people may like it others may not... try this recipe in small quantity only first and if u like can make it in large quantity from next time... here I have used ash gourd to make dosa, in a similar way and quantity u can also make cucumber dosa, bottle gourd dosa etc...
also, some ash gourds have the pulp bitter in nature others many not.. so if ur pulp is not bitter then remove only seeds and use the soft pulp in dosa making...
