In this short video, I am introducing another traditional Chinese cooking technique, the red-cook or hong shao in Chinese. Pork belly is the most well-known ingredient to be red-cooked. Red-cooked dish carries the unique sweetness. Like many Chinese famous recipes, there is no strict standard for the Red Braided Pork Belly. People add their own twists including adding eggs, tofu to enhance the flavor. For the recipe you are about to watch, I added the potato which ended up equally delicious.

• Pork belly, skin on (2 lb)
• Red potato (1 large)
• Scallion (1 bulb)
• Ginger roots (1.5 tsp)
• Star anise (1)
• Bay leaves (2)
• Dried red chili pepper (4)
• Rock candy (2 tbsp)
• Cooking oil (2-4 tbsp)
• Cooking wine (2 tbsp)
• Salt (1 tsp)
• Light soy sauce (1 tbsp)
• Dark soy sauce (1 tsp)
• Sweet bean Sauce (1 tbsp)
