Ingredients:
1 cup all-purpose flour
1 tbsp baking powder
1 tbsp sugar
1 cup almond milk
1 tsp vanilla extract
1 tbsp coconut oil (for cooking)
Instructions:
In a bowl, mix flour, baking powder, and sugar.
Add almond milk and vanilla extract, whisking until smooth.
Heat a non-stick pan with coconut oil. Pour batter to form pancakes and cook until bubbles form on the surface.
Flip and cook the other side. Serve with maple syrup and fresh fruit.
