Hey guys! I love suqaar aka Somali beef stew. So heres a recipe for a really simple one!

You'll need:
200g beef, diced
Olive oil
1 tbsp of the following spices: paprika, red ras el hanout, liquid maggi, vegetable seasoning, coriander, cumin
1 onion, diced
1 spring onion, diced
Thumb size ginger, chopped
4 large cloves garlic
Small handful fresh coriander
2 cups crushed tomatoes
2-3 baby potatoes/1 large potato, diced
1/2 pepper, sliced

Method
Cut the beef into smaller chunks and place in a mixing bowl. Add 2 tbsp oil and all the spices, mix well and leave to a side. In a large heavy bottom pot heat up some olive oil. Add the onions and ginger and leave to sauté for 5 mins. When slightly translucent, add the meat. Stir well and leave to cook until the meat releases some natural water, this should take about 10 mins. In a postal and mortar crush the coriander and garlic and add to the meat. Mix well and add the tomatoes. Mix well and place a lid on the pan and leave to simmer with lid on for another 30 mins, at this point the meat should be tender but incredibly soft. Remove lid and add the potatoes. Once the potatoes are soft, add the peppers and continue to cook for a few minutes and the peppers will continue to cook in the heat of the sauce even off the pan. Remove from heat, garnish with fresh coriander and serve!
