In 2018 the 3rd special seminar of Carpigiani Gelato Pastry University featured Fabrizio Fiorani, a young star who innovates contemporary pastry in fine-dining kitchen. The seminar introduced gelato pastry specialties inspired from Fiorani’s publication “Between Dreams and Reality” (Chiriotti Editori, available here) in which he expresses his ambition, obsession and passion, imagination and aesthetical strength.
