Recipe from my dessert eBook Oh Sweet Vegan
Banana cake:
2⁄3 cup coconut sugar, sifted
1⁄4 cup rice malt syrup
1 cup mashed ripe banana (roughly 2 bananas)
2 tsp apple cider vinegar
1 tsp vanilla extract
1⁄4 cup applesauce
250ml (1 cup) almond milk
1 1⁄2 cup buckwheat flour
2⁄3 cup almond meal
1 tsp baking powder
1⁄2 tsp baking soda
1⁄2 tsp cinnamon
Coconut whip:
1 can (400ml) of full-fat coconut cream, chilled in the fridge for 24 hours
1-2 tbsp maple syrup
1⁄2 tsp vanilla extract
- Bake at 180°c for 25 minutes. Ensure the cake is completely cool before adding coconut whip, otherwise it will melt.
