Ingredients
risotto rice (Arborio, Vialone, etc.) 250 g
onion 1 pc
butter 50 g
white wine, dry 150 ml
vegetable broth or chicken broth 1 L
salt / pepper
chanterelles 300 g
parmesan cheese 40 g
saffron 1 g
sage leaves
chop onion very finely
clean the chanterelles, cut larger ones in half
melt the butter in a saucepan and fry the chanterelles for about 7-8 minutes
melt the butter in a saucepan, saute the onion until translucent
add rice and let it become translucent
add white wine
add hot broth so that the rice is lightly covered
stir constantly
add the saffron
add every 2-3 minutes broth so that the rice is always lightly covered
total time of cooking risotto is 20-25 minutes
add the chanterelles to the rice mix in
mix the parmesan into the risotto
add sage leaves and mix
