Ingredients:
• 1/2 cup white sugar
• 1 tablespoon of corn starch
• 1/2 cup oat milk
• 1/4 cup fresh lemon juice (about 2 lemons)
• 2 teaspoons of lemon zest (from about 1 lemon)
• 1/8 teaspoon turmeric (optional for color)
Recipe:
1. In a small saucepan, combine sugar and corn starch. Now mix non-dairy milk, lemon juice, lemon zest and turmeric. Put on medium heat, often whisking, until the cottage cheese thickens, about 5 minutes. You may need to whisk vigorously, as it thickens to ensure smoothness of the curd.
2. Remove from heat and pour into a heat-resistant container for cooling. Can be stored in the refrigerator for up to 1 week. After cooling, the cottage cheese will become even denser.
