Attempting to steal the army jet or heli is probably the most fun you can have in GTA V. There are so many great pieces of hardware to find and it's protected accordingly by shoot-first-ask-questions-later soldiers. Even if you can survive the soldiers, then missiles are launched on take-off meaning it's hard to get even beyond the fence.
However, if you enter the base in the right way either by jumping the fence or using the protected area inside the fence, then you should buy yourself enough time to jump in. There are then two key tips to being successful - use the runway and look behind you on take-off until you are completely clear.
