1/2 cup raw cashews (optional, but recommended)
1 pound broccoli florets, chopped (about 10 cups)
1 large carrot, shredded (about 1 cup)
Salt & black pepper, to taste
4 ounces extra sharp cheddar cheese, shredded (1 cup)
