This savoury, spicy and yummy dip will make you want to eat your vegetables! Nam prik kapi น้ำพริกกะปิ, made with shrimp paste, dried shrimps, garlic, chilies, and lime.
Today I’m sharing with you my recipe that I have developed over the years, and after moving to the south of Thailand and making it for my husband. There are many ways to make Nam prik kapi, particularly in central and southern Thailand. In the central part, they tend to make it a bit sweeter, more liquid and has pea eggplants in it.
The southern way adds more shrimp paste in, different kinds of dried shrimps, as well as shallots, making it more chunky.
I personally prefer to add inn shallots, giving the dip more texture and natural sweetness, and it also helps to reduce the use of sugar in the dip.
Ingredients for one small bowl of Nam Prik Kapi
1.5 big tbsp shrimp paste กะปิ
*if you have the option, always choose the most expensive one. It will have the best quality and flavour

7-8 Shallots หอมแดง
2,5 limes
2tbsp Fish sauce น้ำปลา

In Thailand, this dip is also served with Fried Mackarel - Pla tuu ปลาทู
