Quick and easy Korean rice cake soup (Tteokguk)
New Year’s Day is coming soon. Traditionally Koreans eat rice cake soup to celebrate New Year. I have been eating rice cake soup on New Year’s Day as long as I remember. This recipe is really easy and quick. You can make this any time of the year and enjoy with your family!
Ingredients:
2 bags of beef bone broth: Bibigo brand
4 cups of rice cake slices
1/2 to 1 cup of water
1/2 tbsp minced garlic
Dash of ground black pepper
1 large green onion: chopped
2 eggs: beaten
1/2 sheet of roasted seaweed: cut into 2 inch long pieces
1 red chili: sliced
*You can season the soup with salt or Korean soup soy sauce.
*You can also add dumplings.
