Serves 2-4

Ingredients -

Salad -

1/2 - Long Red Chilli, Deseeded and Thinly Sliced
1/2 - Lime, For Serving
50g - Unsalted Peanuts, Roasted and Roughly Chopped
1 (300g) - Squid or Calamari, Scored and Thinly Sliced
1 - Carrot, Peeled and Julienned
1/2 (320g) Wombok (Chinese Cabbage) - Thinly Sliced
250g - Red Cabbage, Thinly Sliced
15g - Fresh Mint, Roughly Chopped
20g - Fresh Coriander (Cilantro), Roughly Chopped
Fried Shallots to Garnish (I use 1 Tbs per serving)

Nuoc Mam Dressing -

1/2 - Long Red Chilli, Seeds Included
1/2 - Lime
1 - Garlic Clove, Crushed
1 Stalk (20g) - Lemon Grass, Crushed
10g - Ginger, Sliced
3 - Kaffir Lime Leaves
75ml - Fish Sauce
50ml - White Vinegar or Rice Wine Vinegar
20ml - Water
70g - White Granulated Sugar
