Siri Paye
Serves 8-10
Recipe in English:
Ingredients:
-Cooking oil ¾ Cup
-Mutton mix boti ½ kg
-Tez paat (Bay leaves) 2
-Badi elaichi (Black cardamom) 3
-Darchini (Cinnamon sticks) 2
-Laung (Cloves) 4-5
-Sabut kali mirch (Black peppercorns) 1 tsp
-Zeera (Cumin seeds) 1 tbs
-Pyaz (Onion) sliced 1 large
-Paya (Mutton trotters) ½ kg
-Siri (Mutton head) 750 gms
-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Namak (Salt) 1 tbs or to taste
-Dhania powder (Coriander powder) 2 tbs
-Lal mirch (Red chili) crushed 1 tsp
-Kashmiri lal mirch (Kashmiri red chili) powder 1 tsp
-Pani (Water) 1 litre or as required
-Cooking oil 4-5 tbs
-Tez paat (Bay leaves) 2
-Zeera (Cumin seeds) 1 tsp
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 6-7
-Darchini (Cinnamon sticks) 3
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Pyaz (Onion) chopped 1 large
-Dahi (Yogurt) whisked 2 Cups
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chili) powder 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Pani (Water) 2-3 Cups or as required
-Adrak (Ginger) julienne
-Hari mirch (Green chilies) chopped
-Hara dhania (Fresh coriander) chopped
Directions:
-In pot,add cooking oil,mutton mix boti and mix well until changes color and fry for 4-5 minutes then take out in a bowl.
-Add bay leaves,black cardamom,cinnamon sticks,cloves,black peppercorns,cumin seeds and mix well.
-Add onion and fry until light brown.
-Add mutton trotters and mix well until changes color.
-Add mutton head and fry for 4-5 minutes.
-Add ginger garlic paste,salt,coriander powder,red chili crushed,kashmiri red chili powder and mix well for 4-5 minutes.
-Add water and mix well,cover and cook on low flame for 1 hour.
-Add fried mutton mix boti and mix well,cover and cook on low flame until meat is tender (approx. 1 hour) then cook on high flame until water is reduced.
-In wok,add cooking oil,bay leaves,cumin seeds and mix well.
-Add black cardamom,cloves,cinnamon sticks and mix well.
-Add ginger garlic paste and mix well.
-Add onion and fry until translucent.
-Add yogurt and mix well.
-Add salt,red chili powder,kashmiri red chili powder and mix well.
-Add turmeric powder,mix well and cook until oil separates (8-10 minutes).
-Now add yogurt mixture into cooked siri paye mixture,mix well and cook for 8-10 minutes.
-Add garam masala powder and mix well.
-Add water,mix well and cook until desired consistency.
-Remove & discard bay leaves and black cardamoms.
-Garnish with ginger,green chilies,fresh coriander & serve.

-Pot mein cooking oil aur mutton mix boti dal dein aur rang tabdeel hunay tak ache tarhan mix karein aur 4-5 minutes kliya fry ker lein phir bowl mein nikla lein.
-Tez paat,badi elaichi,darchini,laung,sabut kali mirch aur zeera dal ker ache tarhan mix ker lein.
-Pyaz dal dein aur light brown hunay tak fry ker lein.
-Mutton paya dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Siri shamil karein aur 4-5 minutes kliya fry ker lein.
-Adrak lehsan paste,namak,dhania powder,lal mirch crushed aur kashmiri lal mirch powder dal ker 4-5 minutes kliya ache tarhan mix ker lein.
-Pani dal ker mix karein aur dhak ker halki ancch per 1 hour kliya paka lein.
-Fried mutton mix boti dal ker ache tarhan mix karein aur dhak ker halki anchh per ghost gul janay tak paka lein (approx. 1 hour) phir tez ancch per pani reduce ho janay tak paka lein.
-Karhai mein cooking oil,tez paat aur zeera dal ker ache tarhan mix ker lein.
-Badi elaichi,laung aur darchini dal ker mix karein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Pyaz dal ker translucent hunay tak fry ker lein.
-Dahi dal ker ache tarhan mix karein.
-Namak,lal mirch powder aur kashmiri lal mirch powder dal ker ache tarhan mix karein.
-Haldee powder dal ker ache tarhan mix karein aur oil alag hunay tak paka lein (8-10 minutes).
-Ab cooked siri paya ka mixture mein dahi wala mixture dal ker ache tarhan mix karein aur 8-10 minutes kliya paka lein.
-Garam masala powder dal ker ache tarhan mix ker lein.
-Pani shamil karein aur ache tarhan mix ker ka desired consistency anay tak paka lein.
-Tez paat aur badi elaichi nikla lein.
-Adrak,hari mirch aur hara dhania sa garnish ker ka serve karein.
