ARBI MASALA FRY
INGREDIENTS
Arbi – 500 grams.
Chaat masala – 1/2 tsp.
Coriander powder – 1 tsp.
Turmeric powder – 1/2 tsp.
Garam masala – 1/2 tsp.
Red chilly powder – 1/2 tsp.
Amchur powder – 1/2 tsp.
Salt as per taste
Gram flour (besan) – 2 tbsp.
1 tbsp finely chopped coriander leaves.
Ajjwain – 1 tsp
Oil – 2 tbsp for shallow frying
ARBI MASALA FRY
METHOD
Wash Arbi and pressure cook for 1 whistle.
Don’t over cook, it should not become very soft.
Peel and cut them length wise or in roundels.
Mix all the spices with besan.
Now coat all the arbi pieces one by one with the besan mixture.
Keep aside for 5 – 10 minutes.
Take oil in a non-stick pan and fry the arbis by turning them till they turn crispy.
Remove and keep aside.
In the end squeeze lemon juice and garnish with coriander leaves.
Serve as a side dish for rice or chapatti.
