Starting with the Warrior and leveling up to 101, you can have 40 VIG, 40 STR, and 40 DEX (the soft cap for each of those stats), and 35 END, along with enough VIT to wear heavy armor. Now to chose a weapon:

You could grab a casul dark sword but you will lose in a trade fest with a great or ultra greatsword. You could pick an ultra, but will often lose to someone who knows how to press [roll] button. Greatswords are the best of both worlds, they have hyper armor and can still swing quickly enough to break stances of slower weapons.
