This happens to be the best gin ice cream you will ever taste. Grapefruit, Thyme and Tarquin' s Gin is the perfect combination.

Ingredients:
100ml cup water
100ml granulated sugar
Peel of half a grapefruit
1 tsp fresh thyme (plus extra for sprinkling)
200ml double cream
6 tablespoons icing sugar
100ml freshly squeezed grapefruit juice or 50ml added with 50ml Tarquin's gin
Method:
Make the syrup by dissolving sugar in hot (not quite boiling water) Add the thyme and grapefruit peel.
Leave in the syrup for about 15 mins (or longer if you have time), strain and then pop into the fridge to fully cool.
Whisk the double cream in a large bowl until it thickens.
Slowly whisk in icing sugar.
Add your grapefruit and gin (or just grapefruit if for some reason you didn't want the gin!)
Finally add about 70ml sugar syrup and stir until smooth.
Pour the mixture into a container with a tight lid and freeze overnight or for about 4 hours
To serve sprinkle over a little more thyme and enjoy!
