Kashmiri wazwan is the combination of more than 20 dishes. some are salty, some are sweet some are sour while as some are too spicy. the colours are dynamic and beautiful.
Let us take a look from the beginning.
first of all you are served rice in a big plate which in which 4 people eat together. The plate is usually garnished with 5 dishes.
no 1 is the mehtimaaz it is minced intestines and other organs of the sheep or goat. second is the tabakmaaz which is the ribs of mutton fried in ghee. thirdd is the kabab which is minced meat roasted on the skewers. fourth is the chicken, a full chicken or two just deep fried and then dipped in the juicy wazwan soup. fifth is the mutton shanks big and tasty.
you are also given bags to take the meat from the pl.ate as you get very little time to eat them as the chef comes with the 1st dish that he serves you. The first dish is rista which are minced meat balls. you also get its thick gravy which you can enjoy with the rice. the dishes are put directly on the plate on the rice. you are served 4 ristas for 4 people on your plate. after the ristas you are served roganjosh which is meat chops with an awesome gravy. after that you are served danival korma which is also meat chops but small in size than rogan josh.After this you are served chaaman which means a huge piece of cheese cooked with tomatoes. after this you are served aabgosh which is a white sweet milk falvoured meat chop. After this you are served mushroom. After this dish you are served palak korma which is meat cooked with end of wazwan like halwa or phirni. you are also served pulao in between the wazwan. curd is also served.
