Ingredients 🥜 (makes about 12)
•1 flax egg (1 Tbs. ground flaxseed + 2 Tbs. water. Let thicken for 5 minutes.)
•1½ Tbs. pure maple syrup or honey
•½ cup creamy natural peanut butter
•¼ cup oat flour, blanched almond flour, or cashew flour
Chocolate Coating🍫
•1¼ cups dairy-free dark chocolate chips
•4 tsp. refined coconut oil (measured as solid)
optional topping: flaky sea salt
Instructions
1. In a medium bowl, add flax egg, maple syrup, and peanut butter. Mix until smooth. Add in oat flour and mix until a dough forms. Shape into eggs and place on parchment lined plate. Put in the freezer to chill at least 20 minutes.
2. Melt the dark chocolate chips and coconut oil in microwave in 25-second intervals, stirring in between each to avoid burning. You may also use a double boiler.
3. Coat each Reese’s egg in melted dark chocolate and place back in the freezer until hardened for 20 minutes. Enjoy! Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
