Instructions for “Poolish” the Sourdough “starter”
Take 2/3 cup of the "Chef" you made yesterday and place in a bowl. Add 8 oz of room-temperature water. Break the levain up in the water. Add 1 ½ cups of flour (8 oz). Stir well to combine and add oxygen to the mix. Cover and place on counter for 24 hours. Next day, we’ll be making sourdough bread!
For "Chef" that will return to the fridge until ready to bake again:
To the remaining levain (after your 2/3 cup came out) add ¾ cup plus 2 tablespoons water, and ½ cup flour and mix well. You’ve now fed the “Chef.”
Cover, place in the fridge. Ready for the next time you are ready to bake.
