EZ Pork & Beans
Ingredients
6 15 oz. cans pork and beans
3-4 lb. pork butt or shoulder roast, diced, browned and lightly seasoned
1 lb. pork belly bacon, diced, browned
1 sweet yellow onion, diced
2 orange bell peppers, diced
2 cups beef broth
1 cup brown sugar
1 16 oz. can tomato sauce
1/2 cup molasses
1/4 cup yellow mustard
1/4 cup ketchup
3 tbs. worcestershire sauce
1 tbs. hot sauce
1 tbs. garlic powder
1 tsp. ground sage
salt & black pepper (season to taste)
montreal steak seasoning (to lightly season diced pork roast)
Directions:
Add pork and beans to a 14" deep camp oven.
Dice pork roast, brown in large skillet and add to oven.
Dice bacon, brown in a large skillet and add to oven.
Dice onion & bell peppers and add to oven.
Add remaining ingredients except salt and pepper to oven, gently stir until evenly mixed.
Place lid on oven and bake 3 hrs. placing 21 briquettes on lid, 15 briquettes under oven.
Arrange coals in single rings close to oven wall and change them every hour.
After 3 hrs. remove lid, place spent coals from lid under oven, continue to cook beans uncovered to reduce liquid, if need be.
Add salt and pepper to taste.
