Lapskaus is a Scandinavian stew made out of meat and root vegetables. Due to the wide range in which it is made in northern Europe, there are many variations.
The dish may be made of fresh or leftover meat (usually beef or lamb, but sometimes also chicken, pork, or ham) and potatoes. Other typical ingredients are vegetables (such as carrots, onions, leeks, celery root, and rutabaga), spices (such as pepper or ginger), salt, and herbs.
This here recipe is a so called "brun lapskaus", which uses beef and stock or gravy to make a rich, thick stew.
The other one is called "lys (light) lapskaus", and is made with lightly salted pork knuckle; suppelapskaus, which is a thinner, soupier type of stew.
