Stem removal on a Seiko 7009 (Seiko 5) automatic watch movements in easy steps:

1. Pull the crown out to the second click.
2. Use something with a fine point to push on the stem release lever that appears next to the stem.
3. While pushing on the lever (not too hard), gently pull the stem out.

To replace the stem, you don't need to press the dimple again. Just gently push in the crown and stem, maybe wiggling it carefully.
